The religious examples are called pilgrim badges, a type of keepsake or tourist gift ware of the age, and the secular examples became very popular during the 14th & 15th centuries, as  ‘livery’s’ and love tokens or seem to have illustrated popular follies and proverbs of the time, others simply seem to have declared the wearer’s proficiency at, or interest in, a sport or activity.
